Any paladin could use corpse walk (which is a common paly skill) to catch people. Fire palys don't have any stuns and keep in mind that scrolls are going to be hard to pay for and find ingame as a fire paly. Water palys are strong against Fire since Fire is put out by water. Going against the grain of a popular element can be an advantage in this game.
There is more user content as you level so not too much boredom. If you don't like grinding then TQ when you can, then craft and earn magic points.
I don't understand your first question. Wood gives you a lot of health and then higher health regen bonus. The minor element compliments the major element but the bonus is not as strong as the major. So going Wood/Earth means tons of health and a fair amount of defense. Going Earth/Wood would mean tons of defense and a fair amount of health.
Some things come down to skill in pvp, this game isn't a good button smash game. If you're lousy at timing attacks and picking spells to counter attack other spells, then you're going to do poorly at pvp. So it is about choosing a char combo to best reflect your playing style. If you like fast attacking and stronger hits Fire/Metals or Metal/Fires are popular combos. If you want to stay alive longer, Earth and Health are good combs or mixing Metal/Earth or Wood/Fire gives you some more surviving power with a increase in attack or speed.
